super quick tomato sauce for pasta

this is best with either a bavette or linguine pasta

  • 1 tin peeled tomatoes
  • 1 garlic clove, smashed
  • 1 red chilli, (slice through nearly to end but not completely)
  • 1 tsp salted capers
  • 1 beef stock cube
  • 2 anchovies
  • grated parmesan
  • basil leaves

Head 1 tablespoon olive oil in a small saucepan, add garlic, chilli and a few basil leaves.  Cook for about 1minute then add peeled tomatoes and stock cube.

Mash tomatoes with fork or potato masher.  Add  capers and continue to cook for 5 mins. Remove garlic, chilli and basil leaves.

Serve over pasta with freshly grated parmesan cheese and chopped basil leaves.
